What is the ideal serving temperature for red wine?

In the past, the false myth that the ideal temperature for red wine is “room temperature” was very common. This argument is contextualized in France when the houses did not have central heating and the bottles were kept in the cellars to be served shortly after being in a room at the recommended temperature (16ºC). But this ceased to make sense when currently central heating is available in any room where you are going to enjoy these wines.

Therefore, the ideal temperature for red wine, as already specified, is generally 16ºC as indicated by Catatu, but we must take into account some details depending on what type of wine it is.

  • Young red wines are more acidic, with less tannic load and structure, so they will be the ones served at a lower temperature. The recommended temperature for these young wines without aging should be between 12º and 15ºC. An example is our excellent Segura Viudas Garnatxa.
  • Aged red wines are wines that have aged between 6 and 12 months and therefore they have a medium tannin load and the acidity decreases. The ideal temperature would be between 14º and 17ºC. We recommend our Segura Viudas Mas d’Aranyó.
  • Red wines with prolonged aging are wines with more than 12 months of aging and can exceed 36 months. These wines are usually tannic since, if they were not, they could not withstand such long periods of aging. The ideal temperature to serve them ranges from 16º to 20º.

And white wine, at what temperature should it be taken?

White wines, in general, are wines that are served cold because the low temperature makes the acidity less aggressive, but we must be careful when cooling the wines because if the temperature is too low, we will find that we can break the balance of acidity and aromas of the wine.

That is why it is so important to know at what temperature each type of white wine should be served, as indicated by Noc:

  • White wines rich in fruit and flower: they can be served very cold, with a temperature between 8 and 10ºC. We recommend Segura Viudas Xarel·lo.
  • White wines that have not been in the barrel: they should be served at a fairly cold temperature, between 10º and 12ºC. In this way we will ensure that alcohol does not predominate and that the acidity is ideal. It is recommended to put them in an ice bucket with water, ice and salt for 12 or 13 minutes, or two hours in the fridge.
  • Aged white wines: in this case, the ideal temperature will be around 12ºC so that the flavours that the passage through the barrel introduces into the wine can appear. Put them in the ice bucket for 10 minutes or an hour and a half in the fridge. We must remove it well in advance to achieve this perfect temperature. A good example is Segura Viudas Creu de Lavit.
  • Cava: these sparkling wines must be served at a temperature of 6º or 7ºC to ensure that the bubble looks at its maximum splendour and does not turn too bitter. They should be in the ice bucket for more than 15 minutes or 2 hours and a half in the fridge before serving. A good example is our classic Brut Reserva Heredad.

What happens if the wine gets too cold?

If we drink it very cold, the wine will lose its aromas, and if the temperature is very high, both the acidity and the alcohol will be accentuated, so the taste of the wine will be lost.
