What you should know about cava

Cava is one of the best-selling sparkling wines of the Catalan winemaking tradition. It dates back to the 19th century and the secret behind the quality of this sparkling wine lies in the second fermentation in the bottle.

The Cava wine region includes 159 municipalities across ten different provinces in Spain (Barcelona, Tarragona, Lleida, Girona, La Rioja, Álava, Zaragoza, Navarre, Badajoz and Valencia), which boast unique grape varieties for the making of cava.

Process of making cava or sparkling wine

True to our roots and our care for the environment, at Segura Viudas, we make cava according to the traditional method or the méthode champenoise in order to offer the best possible quality. Unlike other sparkling wines, this method is characterised by a second fermentation during the process, in which liqueur de tirage (a mixture of sugar and yeast) is added to still wine. This creates the trademark bubbles that we need.

Characteristics of cava

Cava is shaped by three essential aspects that make up the terroir: the soil, climate (Mediterranean) and grape varieties. The latter is what makes cava truly unique and one of a kind, and there are nine types: Macabeo, Xarel·lo, Parellada, Chardonnay, Subirat Parent, Red Grenache, Trepat, Monastrell and Pinot Noir.
