Salmon with Cava

Salmon is the quintessential Christmas fish and on the other hand, Cava is the perfect drink to accompany the gastronomy. That is why we are going to combine both in an extremely delicious and very easy to make dish, which you can serve this Christmas at your table.

  • 1 bay leaf

  • 400 grams of fresh salmon
  • 1 onion
  • 50 grams of butter
  • 150 grams of ripe tomatoes
  • 350ml Segura Viudas Lavit Brut Nature
  • A tablespoon of flour
  • A tablespoon of liquid cream
  • A sprig of thyme
  • A sprig of tarragon

The preparationGuide

Step by step

  1. We cut the tomatoes in two and remove the seeds, chop the onion and place everything in a pan with a little butter, and add the herbs.
  2. We place this cooking in a container for the oven and place the salmon, and pour the Segura Viudas Lavit Cava over it. We recommend keeping the rest in the fridge and tasting it with this same dish.
  3. We add everything to the oven at medium temperature for half an hour and when it is ready, we put the salmon aside.
  4. With the cooking juice we beat everything and make a sauce. The sauce will be made up of the cooking juice, the butter, the flour and the cream. If the sauce is too runny, you can thicken it with a tablespoon of cornstarch dissolved in a little cold water. It is added just after the cream and heated until it thickens, but does not come to a boil.
  5. We serve the salmon by pouring the sauce on top, it can also be served with vegetables or steamed potatoes and, ready to taste!
