Step by step
We hydrate the gelatin sheets in water for five minutes. In a saucepan, heat the lemon juice with the sugar and a little bit of cava, the minimum to be able to dissolve the sugar, we will add the rest later so that it does not lose strength.
When the mixture begins to boil, add the drained gelatin and stir until completely dissolved. Add the rest of the Segura Viudas Brut Reserva cava slowly, mix and transfer to the presentation glasses. We place two or three raspberries in each glass and refrigerate for at least two hours.
We present at the table placing in each glass some extra raspberries and a few mint or mint leaves. If we want the cava to lose strength, we will put everything in the saucepan so that it boils with the sugar. This delicious recipe that Directo al Paladar proposes to us would be ready.
Advice
This cava jelly can be served as a dessert as we present it to you with raspberries and mint or it can be used in other savory recipes, to accompany a patê, for example, or game meat.
