Traditional Method
Segura Viudas produces artisanal cava wines using the ‘traditional method’ process. The double fermentation process has been used for centuries to make sparkling wines, producing the highest quality wines with multiple layers of complexity, fruit and more refined bubbles.
Aging of lees
After the primary fermentation and bottling, our wines undergo a second fermentation process known as aging of lees.
Riddling
The wines are aged from one to five years, placed on special racks at a 45-degree angle and undergo ‘riddling’ so that the yeast sediments, or lees, collect in the neck of the bottle.
Disgorgement & Dosage
After aging, the lees are removed through the disgorging process. Immediately after disgorging, the bottles are topped off with the original base wine and sugar is added, a practice known as dosage.
The elixir of life
Our premium quality wines are made from the finest grape varieties which are indigenous to the region.
In many areas of Spain, the rich heritage of indigenous varieties are being rediscovered. These had been forgotten, as the French varieties became fashionable in international markets.
We’re amazed at how these varieties behave: they adapt to climate change much better, allow more sustainable agricultural practices and give our wines authenticity.
