  • ½ leek
  • 100 grams. serrano ham
  • 50 grams. of butter
  • 1 tablespoon of flour
  • Lemon squeeze
  • Salt pepper

  • Chives/parsley

The preparationGuide

Step by step

  1. Place a frying pan over medium heat with the butter and fry the thinly sliced leek.
  2. When the leek begins to turn golden, add the ham cut into small pieces, a squeeze of lemon and cook it for 1 more minute.
  3. We add the tablespoon of flour, we continue cooking it, although in about 15 seconds we will see that the flour begins to toast.
  4. Add the scallops (defrosted), raise the heat and add a glass of Segura Viudas Lavit Brut Nature cava, we can drink the other glass very cold while we finish cooking. Season it with salt and pepper and stir it until you see that it is starting to become creamy.
  5. Chop a little parsley or chives on top and serve hot.
