Prawns in Cava is an easy and perfect recipe for Christmas, since this is one of the times of the year when we consume the most seafood. In general, prawns are cooked on the grill or in the oven, with a bit of oil, but if you want to give this dish a bit of sparkle, adding a touch of Cava is a great success to give it an exquisite flavour.

  • 24 prawns (6/pax approx)
  • 300ml of Brut Reserva Cava
  • 1/2 cup of EVOO (Extra Virgin Olive Oil)
  • 1 tablespoon of flour
  • 30/40 almonds
  • 4 cloves of garlic
  • Parsley and salt

The preparationGuide

Step by step

  1. We start by making a mince with the garlic, parsley and almonds.
  2. Add the EVOO and flour, stir until a paste is formed and set aside.
  3. We put a saucepan on the fire and distribute the prawns, spread the reserved mince over the top. We add 300ml of Segura Viudas Brut Reserva cava and a little salt.
  4. When it begins to make “chup, chup” cover the saucepan and leave over medium heat for about 10 minutes. After these minutes, uncover and let it cook for 5 more minutes. If the prawns had drunk all the cava, we can add a little more. Ideally, there is sauce left to be able to dunk later with bread.
  5. Once cooked, we serve it in a fountain.
