    • 2 lbs. Chicken Breast, skinless and boneless
    • ½ cup Coconut Milk
    • 1 clove Garlic, minced
    • 1 ½ tsp. Brown Sugar
    • 1 tbsp. Fish Sauce
    • 2 tbsp. Soy Sauce
    • 1 tsp. Curry Powder
    • ½ tsp. Salt
    • ½ tsp. ground Black Pepper
    • 10 (6 inch) Wooden Skewers, soaked in water for 30 minutes

    Step by step

    1. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce.
    2. Combine chicken and coconut milk mixture; marinate for at least 2 hours.
    3. Drain chicken from marinade.
    4. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper.
    5. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through.
